Marble Cheesecake (The Joy of Cheesecake, pg. 101)
Recommendations: Basic Crumb Crust (pg. 46) 9-inch springform pan
Ingredients: 3 squares (3 oz) unsweetened chocolate 1 teaspoon vegetable shortening 2 pounds cream cheese 2 teaspoons vanilla extract 11/2 cups granulated sugar 6 large eggs, lightly beaten 2 cups light cream, or 1 cup heavy cream and 1 cup milk
- Preheat oven to 450 degrees.
- Melt the chocolate with the shortening in the top of a double boiler.
- Meanwhile, in a large mixing bowl, beat the cream cheese and vanilla until light and fluffy.
- Slowly add the sugar, then the eggs. Beat just until well blended. Stir in the cream.
- Place about 3 cups of the cream-cheese mixture in a separate bowl and add the melted chocolate. Blend.
- Pour the plain cream-cheese mixture into the prepared crust. Add the chocolate mixture by dabbing spoonfuls on top in about 3 different spots. Use a knife or spatula to swirl the chocolate mixture through the white mixture in a zigzag motion, in effect marbling the cake.
- Bake for 15 minutes at 450 degrees, then reduce the oven temperature to 300 and bake for an additional hour. Allow the cake to cool in the oven for 30 minutes, then cool to room temperature, chill.

You're welcome, Peppermint. I usually make it with the typical graham cracker crumb crust, though I add a couple teaspoons of cocoa powder to the crumbs to give it a little extra chocolate hit.

Through the Looking Drum An interesting composition looking through the mic hole in the of the bass drum's resonant head, through the inside of the drum and it's clear batter head. No filters or editing tools were employed, except for a simple cropping.
