Ingredients •1 pound bulk mild Italian sausage •1 1/4 teaspoons crushed red pepper flakes •4 slices bacon, cut into 1/2 inch pieces •1 large onion, diced •1 tablespoon minced garlic •5 (13.75 ounce) cans chicken broth •6 potato, thinly sliced •1 cup heavy cream •1/4 bunch fresh spinach, tough stems removed
Preparation Cook the Italian sausage and red pepper flakes in a Dutch oven over medium-high heat until crumbly, browned, and no longer pink, 10 to 15 minutes. Drain and set aside. Cook the bacon in the same Dutch oven over medium heat until crisp, about 10 minutes. Drain, leaving a few tablespoons of drippings with the bacon in the bottom of the Dutch oven. Stir in the onions and garlic; cook until onions are soft and translucent, about 5 minutes. Pour the chicken broth into the Dutch oven with the bacon and onion mixture; bring to a boil over high heat. Add the potatoes, and boil until fork tender, about 20 minutes. Reduce the heat to medium and stir in the heavy cream and the cooked sausage; heat through. Mix the spinach into the soup just before serving.

Just a suggestion here, you can do as you like BUT an entire thread dedicated to ONE SOUP may not get many responses. Perhaps if U rename the thread to a broader context, you might get more. keep this post above as the first. Just saying.

SLOPPY JOES (ala Serge)
1 tblsp olive oil or veg oil
1 lb (pkg) chopped meat (turkey, beef, etc)
1 onion diced
1/2 pepper diced
@ 1/2 cup ketchup, maybe more
@ quarter size dollop barbecue sauce
pinch of salt and pepper
EITHER 1 tblsp chopped garlic, 3-4 garlic cloves smashed, or sprinkle garlic powder.
1) on med heat, add oil and brown the meat and drain.
2)While meat draining, add vegetables and garlic only.
sweat vegetables for about 5 mins or till translucent.
3) Sprinkle salt and pepper on vegetables and add back the meat.
4) put barbecue sauce and ketchup on meat and mix.
5)keep on med high heat for @ 10-15 mins and stir occasionally
6) reduce heat to low and simmer for another 30 mins, stirring occasionally.
let some of moisture cook out but not completely.
7) Serve on rolls or bread of choice.

Broccoli Quiche
Ingredients: 1 med. onion diced *(1/2 cup chopped green peppers) - optional (I don’t use this) 2-10 ounce packages of frozen chopped broccoli 2 cups, or 2- 8oz. pkgs, shredded cheddar cheese 1 ¼ cups milk 1/2 cup bisquik 3 eggs 1 teaspoon salt 1/4 teaspoon pepper 2 frozen deep dish pie crusts
- Cook broccoli in boiling water for @ 5 mins. In the meantime, beat the three eggs, add salt and pepper, bisquick and milk and mix well. Drain the broccoli and add the broccoli to the chopped onion in a bowl, mix well. Put equal portions of the broccoli mixture in each piecrust. Add the bisquick/egg mixture.
- Bake @ 400 degrees. After 20 mins., spread generous, equal amounts of cheese on top of each pie (you may wind up with a little left over cheese). Bake for another 15 mins, for a total of @35-40mins. Take out of the oven and let cool. Serve or freeze the quiche.

This one is something that my mom used to make when I was growing up. You won't win any chili cook-off competitions with it, but when the taste buds call for a quick pot-o-red, it's not bad.
Quick Chili Ingredients:- 1 pound ground beef (chuck)
- 1 medium onion, diced
- 1 6 oz. can tomato paste
- 3 cans (the tomato paste can) water
- 1 - 1.5 tablespoons chili powder
- 1 28 oz. can kidney beans
- Salt and pepper to taste
Preparation: Brown the ground beef and onion. Drain off excess fat. Mix in the remaining ingredients. Bring the chili just to the boil.
Reduce heat and simmer for 20 minutes, stirring occasionally. - - -

So true. I noticed a small omission in my post and edited to correct it. That's a 28 ounce can of kidney beans.
Of course it goes without saying that the recipe can be modified to your personal taste. Like it more spicy/hotter, add more chili powder and/or some hot peppers. Don't like beans in your chili, just don't put 'em in.

THREE BEAN SALAD (my own) 1 can kidney beans, 1 can white beans, 1 can garbanzos (drained and rinsed) 1 onion diced 1/2 bell pepper diced 1 carrot diced 1 stalk celery diced olive oil to taste, but enough to moisten *** mix all ingredients together, drizzle some olive oil and toss. use as a base to add what you like, or eat as is. I sometimes add shrimp or tuna. Can add a vinagrette if you like as well

Golden Clam Chowder (adapted from a recipe from taste of home Mag Dec 2011)
Ingredients • 2 celery ribs - DICED • 2 medium carrots- DICED • 1 medium onion-DICED • 2 teaspoons olive oil, or more to saute vegetables • 4 garlic cloves, minced • 3 medium potatoes, peeled and diced • 2 cans (6-1/2 ounces each) shrimp, drained and rinsed • *(original called for two 6.5 oz cans clams,undrained)* • 1 bottle (8 ounces) clam juice • 1 can fat free, low sodium chicken broth • *( Original called for1 cup plus 1 tablespoon water, divided) • 1 can (12 ounces) evaporated SKIM / Fat Free milk • 1 can White beans, drained and rinsed and BLENDED w/ CHICKEN broth • *(OR fresh soaked overnight equal to @ 1 1/2 cups)* • 1 teaspoon dried thyme • 1/2 teaspoon salt • 1/2 teaspoon pepper *******
These two part of original which I eliminated: 2 teaspoons cornstarch 2 bacon strips, cooked and crumbled
Directions • In a Dutch oven or pot, SAUTE vegetables in oil until tender. • Add garlic; cook 1 minute longer, also BLEND THE BEANS and BROTH • then add BEAN/BROTH mixture to the pot along with the potatoes, clams, clam juice, thyme, salt and pepper. • Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until potatoes are tender. • Gradually stir in evaporated skim milk and stir into chowder. Bring to a boil; cook and stir for 2 minutes or until thickened. • If TOO thick, add a little water or broth. • Yield: 7 servings.
Nutrition Facts on original with original ingredients: 1 cup equals 195 calories, 5 g fat (3 g saturated fat), 27 mg cholesterol, 574 mg sodium, 28 g carbohydrate, 2 g fiber, 10 g protein.

Chocolate Tofu Pie (1 Serving)
Ingredients: Graham Cracker Crust: 10 graham crackers ¼ c applesauce or olive oil
Filling: 1 c semi-sweet chocolate 1 lb silken tofu ¼ c chocolate soymilk 1/3 c honey 1 tb vanilla extract
Instructions Preheat oven to 350F. Pulverize the graham crackers in blender or food processor until finely ground. Add the applesauce or olive oil to the container, and process until well integrated with the graham cracker crumbs. Press the mixture into the bottom and up the sides of a 9” pie pan.
Melt the chocolate with 2 Tbsp of water in a heavy saucepan or double boiler. Combine the tofu with the melted chips and remaining ingredients in blender or food processor. Process until velvety smooth. Pour into the piecrust and bake for 30-35 minutes, or until the filling is firm and the crust is golden. Serve at room temperature or chilled.
